Green Bell Pepper Casserole

Here's a recipe for all you people who eat gluten...and it happens to be gluten free! : -) This one's from a friend of mine, and it's very easy. Since packaged fajita seasoning has gluten in it, I made my own fajita seasoning mix from another cookbook, which I used in this recipe.



1/2 sweet onion, diced
1 green bell pepper, diced
GF fajita seasoning (here's the link for the one I make)
1 (10 oz.) can diced tomatoes
1 box Minute brown rice
1 lb. ground beef or turkey (I like to use turkey)
2 c. shredded cheese

Make rice as instructed. While rice cooks, brown meat and add fajita seasoning for flavor. Saute onion on burner; add pepper and more fajita seasoning, and tomatoes near the end. Add meat to the veggies.
Look at this...it looks sooo yummy!

 Spread cooked rice in bottom of 9x13" pan. Put meat and veggies; sprinkle with cheese. Bake at 350 degrees for 15min.

  1. Made this today. Used black rice instead of brown and made diced tomatoes from scratch. Also substituted ground meat with chicken breast. It was VERY delicious. Cudos to you for this recipe.
