Zucchini "pizzas"

 
 These yummy veggies are adapted from Proud Italian Cook. They are a quick, refreshing way for me to get my "pizza fix" :)

Cut the end stems off of the cucumbers, cut them in half lengthwise, and place on baking sheet. Brush halves with olive oil, roasted garlic pieces, salt, and pepper. Cut tomatoes into small pieces, and arrange on zucchini halves. Bake at 350 degrees F for about 25-30 minutes.

Take the veggies out of the oven. Sprinkle with shredded cheese (Parmesan is my favorite, but have used fiesta blend as well), along with dried basil and oregano. Put back in the oven at a top broil for a few minutes, until cheese is melted.
